Valedor is a cocktail lounge at 1620 N Milwaukee Ave in Wicker Park, run by Spearhead Hospitality. The concept is built around the Mexican-Japanese community that grew in Mexico City after World War II, and the bar’s name is Spanish for someone who champions or defends a cause.
The drink list runs through cocktails, sake, agave spirits, and wine and beer, with a reinterpreted-classics approach that mixes Mexican and Japanese technique. The food side is tapas-style, including a tuna poke taco, shishito peppers, karaage chicken, and a sake-spiked gazpacho. A daily ‘Cantina Hour’ happy hour runs 5 to 7 p.m., with complimentary rotating tapas when you order cocktails.
The space is dark and lounge-like, with room for private groups in a smaller nook as well as the main bar. More on the concept and the full drink and food lists are on Valedor’s website.
