Kyōten is a reservation-only omakase sushi counter at 2507 W. Armitage Ave. in Logan Square, led by chef Otto Phan. Guests are seated directly at the sushi bar, where Phan prepares and explains each course as he serves it.
The restaurant builds its nigiri on Edomae principles of purity, harmony and balance, pairing rare and often seasonal fish sourced from Japan and elsewhere with rice seasoned in a blend of aged red vinegars. According to the restaurant, Kyōten was the first restaurant in the U.S. to use Inochi no Ichi, a rare Japanese rice varietal, for its shari.
Chef Phan also runs Kyōten Next Door, a sibling nigiri counter a few doors down at 2513 W. Armitage Ave. Both rooms are reservation-only, and as of a December post from the restaurant, both are now open Tuesdays in addition to their regular schedule.
Kyōten is open Tuesday through Sunday and closed Mondays, with reservations required. Current availability and contact information are posted at kyotenchicago.com, or by phone at (312) 880-9402.
